What is meant by "playing off the string" ?

Suzanne, that technique is called spiccato. It's when we let the bow bounce up and down on the string (like dribbling a ball). When you take the vertical motion of the bounce and add a little horizontal motion with the arm, Voilą! Spiccato. I have some videos on training spiccato. Look for "spiccato" in the tags words column.

Instead of leaving the bow flat on the string when you pull the bow accross, you can bounce the bow making a shorter more accented sound.
