The roller coaster ride is a great simulation of the elation and excitement of learning to play the violin, except in real life, the ride is much longer and much more gratifying.

That must be it Beth.  It's just that usually all the stems on a beam are going in the same direction and the beam either angles up or down depending on whether the notes are ascending or descending.  The beam in the video stays horizontal....lol...maybe it just looks odd because they're contorting the whole staff !  Fun video anyway....my favorite part is when they get to the cork screw curve...short...but "thrilling" !  x-D

It's just a range thing. The rule is, if a note is on the middle line or lower, then the stem is above the note, if the note is on the middle line or above, then the stem points down. Neither the note itself or the rhythm is any different.

In the beginning of the video, where it first starts to pan in on the music....the animation passes by these notes attached with a beam, like when you have a couple of attached 8th notes....only the note in the middle is upside down on the top of the beam and there's a slur marking over the entire note/notes (?).   Just wondering what kind of a note that is and how it would be played....maybe it's for a particular instrument..??

BTW Beth....what were those little upside down notes on the beam ?  I've never seen that.
